A magnificent triptych of restaurants created by three highly reputed craftsmen in the gourmet world and outstanding views from this former Knights Templar Commandery.

Our executive chef Franck Ferigutti proudly earned a Michelin star in 2014 and Meilleur Ouvrier de France title in 2000 for his French gastronomy; head chef Nicolas Davouze received the prestigious Bocuse d'or title in 2014 and pastry chef Florent Margaillan earned "France Champion of Desserts" in 2010. Their individual passion and expertise is evident throughout our three restaurants: the gourmet restaurant Le Saint Martin, bistro chic Le 180° and L'Oliveraie, a taste of summer beneath ancient olive trees.

At Le Rossini guests can anticipate rare cognacs, refined teas and signature cocktails in a graceful atmosphere. Our cellars boast some of the world's most exclusive vintages and Château Saint-Martin & Spa is honoured to host the distinguished wine club Les Canthares, open to vinophiles wishing to share their passion.
