Graced by the talent of Yannick Franques, the Saint-Martin gourmet restaurant, two Michelin stars, serves the finest French classics

The protégé of Alain Ducasse, Christian Constant or Eric Frechon ensures dishes are cooked to perfection with some discreet innovations and seasonings: warm langoustine carpaccio, foam of carrots with caraway seeds, winkles and rocket with Sarawak pepper, or sea bass a la plancha, baby New Zealand spinach leaves with coriander, citrus, almond and black olive dressing...

 

The gourmet restaurant "Le Saint-Martin" will re-open its doors on March 2, 2012.

It is possible to be Parisian by birth and yet be passionate about the French Midi, with its delicious wines, its sun-kissed food, its inspiration from across the border, whilst still being proud of one’s origins.
Such is the culinary challenge to which Yannick Franques has risen. 42 years old, voted Best Craftsman of France in 2004, his experience has been forged in renowned establishments up and down the country.
