The protégé of Alain Ducasse, Christian Constant or Eric Frechon ensures dishes are cooked to perfection with some discreet innovations and seasonings: warm langoustine carpaccio, foam of carrots with caraway seeds, winkles and rocket with Sarawak pepper, or sea bass a la plancha, baby New Zealand spinach leaves with coriander, citrus, almond and black olive dressing...

Signature menu at 170€ per person

"Le Saint-Martin" gourmet restaurant is opened :

- Open from February to December 2010, from 12:30pm. to 2:00pm - and from 7:30pm to 10pm (closed on Monday  and Tuesday).

- From June 2 until the end of August 2010 the gourmet restaurant "Le Saint-Martin" is only open for dinner.

Reservation recommended. Limited number of tables.

As for the desserts, the pastry chef, Jean-Michel Manière lets his ingredients talk for him; pure dark chocolate - for a chocolate and olive confit shortbread accompanied by his basil ice cream - or seasonal fruits, including the irresistible lemon.

Yannick Franques, Head Chef, is awarded his second Michelin star for his menu at the gourmet restaurant Le Saint-Martin

It is possible to be Parisian by birth and yet be passionate about the French Midi, with its delicious wines, its sun-kissed food, its inspiration from across the border, whilst still being proud of one’s origins.
Such is the culinary challenge to which Yannick Franques has risen. Thirty seven years old, voted Best Craftsman of France in 2004, his experience has been forged in renowned establishments up and down the country.
