Food & Beverage Manager, Head Sommelier

Géraud Tournier’s early memories are marked by a well-stocked family cellar where there was a genuine respect for wine, with a ceremonial aspect that always appealed to him.

He started his career at the Louis XV Alain Ducasse in Monaco, where he was spoilt with a cellar of exceptional vintages; then he was invited to join the Paris opening team for La Table du Lancaster by Michel Troisgros, and in 2005 he moved to the grand Parisian institution, Pavillon Ledoyen, taking over from a sommelier of 30 years who had nurtured an impressive cellar. 

Château Saint-Martin & Spa was delighted to welcome Géraud Tournier in 2012, where he currently holds the role of Head Sommelier as well as Food & Beverage Manager.

"The Perfect Pairing" is an exclusive aperitif event hosted by Géraud Tournier at L’Œnothèque Table, a delightful wine cellar in the Château's circular turret.

Géraud Tournier presents one of his favourite vintages from a select vineyard and Chef Jean-Luc Lefrançois draws on his knowledge and inspiration to propose a food pairing.

This great partnership makes for an unforgettable epicurean experience which takes place every Sunday.

Launched in 2010, Les Canthares is the Riviera rendez-vous for wine-lovers which meets in our atmospheric underground cellar on the last Friday of each month. Guests explore oenology, exchange opinions and share their experience in a convivial and intimate atmosphere.

Each gathering Géraud Tournier puts a different vineyard in the spotlight. Following the tasting, guests of Les Canthares are invited to a food and wine pairing dinner, brilliantly organized by our Chef Jean-Luc Lefrançois.
